Easy Key Lime Pie

What a refreshing recipe for this hot & humid weather.....not to mention it's super easy while others will think you slaved over it, lol.

1 14-ounce can sweetened condensed milk
1 6-ounce can frozen limeade concentrate (not thawed)
1 cup heavy cream
1 6-ounce graham cracker piecrust
Zest of 1 lime

Place the condensed milk, limeade concentrate, and cream in the bowl of an electric mixer fitted with the whisk attachment.Beat until fluffy and soft peaks form. Pour the filling into the piecrust and smooth the top.Refrigerate until chilled and loosely set, at least 4 hours (and up to overnight).Sprinkle the pie with the zest before serving.

Yield: Makes 6 servings

I feel very lucky to have friends who felt I needed a shower for this little one! We got so many clothes...just hope it's still a SHE!!

What are you talking about...no shower?! You had that awesome cyberspace shower! All those cool gadgets and helpful mommy items! :)

I must admit, I am VERY jealous that you have friends bringing you meals...gosh that would have been soooo much better than a shower full of clothes! I am still crossing my fingers that my family will surprise us with much needed food when the time comes! ;)

Hope you are doing well- this heat is a killer. Can't wait until it cools down tomorrow. I am on a cleaning spree today and really I need to relax. ha- yea that'll happen with a 2 year old huh?!
